Dovetail is a blend built from several distinct components: woody bourbon, terroir-driven Dunn Cabernet casks, toasted French oak, Late Bottled Vintage Port pipes, and black strap molasses barrels. Each element contributes something specific, and the finished whiskey lands buttery and layered, with the pieces held in balance rather than competing. Bottled at 61.45% ABV in a 750 ml format, with proof that varies from one bottling to the next.
On the palate, the profile is warm and intricate, with oak, spice, and dried fruit threading through a smooth finish that carries well past the sip. Assembling this American whiskey took close to a year of work, from the blending stage through to labeling, and it earned Double Gold at the San Francisco World Spirits Competition along with a number of other recognitions.
