Introduction
Dillon's Ginger Bitters is a small batch artisanal product originating from Canada, specifically crafted in Beamsville, Ontario, within the Niagara wine region. Established in 2012, Dillon's Small Batch Distillers was founded by Geoff Dillon and his father, Dr. Peter Dillon, with a commitment to making 'honest spirits'. The distillery's philosophy focuses on utilizing copper pot stills and a bounty of local, seasonal ingredients sourced through close partnerships with Niagara farmers to ensure unparalleled quality.
Description
The Dillon's Ginger Bitters presents a pungent nose with bold notes of candied and fresh ginger. The aroma is layered with scents of lime zest and a whisper of smoke. On the palate, the bitters are highly spicy and bitter, delivering a powerful 'up-front' ginger kick balanced by a subtle background of fennel and cherry. It is characterized by its bright, fiery heat and a complex, textured profile. These bitters are crafted from a base of 100% local Niagara grapes, utilizing both fresh and dried local ginger along with other natural botanicals. The ABV is 50%. While the distillery emphasizes fresh, natural ingredients and responsible farming practices, the bitters are not certified organic. They are intended for immediate use and maintain their intensity for an extended period.
Food Pairing
The fiery and aromatic nature of these ginger bitters makes them exceptionally versatile for both beverages and culinary uses. They pair perfectly with brown spirits like brandy and rye whisky, serving as a key ingredient in an autumn Sidecar or a signature Sazerac. The bitters also complement gin-based drinks such as a Matcha Highball or a Gin Paloma. Beyond cocktails, they are a great addition to vegetable stir-frys and can add a spicy depth to various baking recipes.
