Crafted from 100% estate-grown Blue Weber agave harvested from the Highlands of Jalisco (Los Altos). Slow-cooked in steam autoclaves, extracted via roller mill, and fermented using natural yeast in open-air concrete tanks under 150-year-old mango trees at Jorge Salles Cuervo y Sucesores (NOM 1108). Double-distilled in traditional copper pot stills, this premium additive-free blanco undergoes a signature finishing step: it is rested for 14 to 28 days in large American white oak vats (pipones). This subtle barrel-contact process rounds out sharp edges, producing an exceptionally smooth, complex expression that balances vibrant highland agave with soft oak nuances.
Food Pairing: Fresh fish ceviche, oysters, grilled shrimp tacos, goat cheese crostini, guacamole with totopos, and citrus-marinated chicken.
Tasting Notes : Brilliant crystal clear with luminous silver reflections and a smooth, medium-to-full body on the glass.
Nose : Sweet cooked agave, crisp lime zest, green apple, subtle white pepper, anis, herbal mint, and a delicate touch of toasted oak.
Palate : Velvety and agave-forward with roasted highland agave, bright citrus oil, melon, light vanilla, minerals, and gentle baking spices.
Finish : Smooth, clean, and lingering with a soft warmth of sweet cooked agave, light black pepper, and subtle wood spice.
Serve : Serve neat at room temperature in a glencairn or Riedel glass to appreciate its subtle oak-mellowed profile, or over a single large ice sphere.
