This sparkling wine is crafted by Emmolo Wines, part of the renowned Wagner Family of Wine, best known for Caymus Vineyards. The winemaker, Jenny Wagner, daughter of Chuck Wagner from Caymus, continues her family’s legacy with this elegant creation. The grapes come from cool coastal parts of California, such as Monterey and Santa Barbara counties, where the climate is ideal for producing high-quality sparkling wines.
Made using the Traditional Method—the same technique used in Champagne—its bubbles form naturally during a second fermentation in the bottle, creating a fine, creamy texture. This wine blends Chardonnay and Pinot Noir grapes (the exact split changes from one numbered release to the next) and is a Non-Vintage (NV) style, meaning it combines wines from different years to maintain a consistent, balanced flavor.
Rested on its lees for more than three years before release, it develops smoothness and complexity. The taste is bright, crisp, and vibrant, offering notes of green apple, citrus, pear, and a touch of brioche or toasted bread. With soft, delicate bubbles and roughly 12% alcohol, this 750mL bottle reflects both quality and heritage, with a dry, lively finish that keeps you coming back for another sip. It pairs beautifully with seafood, light salads, goat cheese, and creamy pastas.
