Sky Rocket is the quintessential New England IPA (NEIPA) from Calgary’s The Establishment Brewing Company. As one of the most decorated breweries in Canada (named Canadian Brewery of the Year in 2021), Establishment has perfected the art of the "haze." Sky Rocket is a core staple of their lineup, designed to showcase the "holy trinity" of modern hops in a package that is as plush and velvety as a cloud. It is a masterclass in balance, proving that a beer can be intensely hoppy without being even slightly abrasive.
Beer Description
Sky Rocket pours a dense, opaque, and glowing pale straw-yellow with a thick, meringue-like white head that sticks to the glass like sea foam.
Aroma: The nose is an aromatic "powerhouse." Expect immediate, high-definition notes of sweet tangerine, juicy peach, and passionfruit. Underneath the fruit is a refined, dank herbal quality reminiscent of fresh-crushed hop pellets and a faint, creamy vanilla undertone.
Palate: On the tongue, it is medium-to-full bodied with a remarkably soft, silken mouthfeel. It leads with a "juice-forward" sweetness of mango and citrus pulp. True to the NEIPA style, the bitterness is incredibly low and rounded (the "pillowy" finish), ensuring the tropical flavors remain the star from the first sip to the last.
Profile: It has a sturdy ABV of 6.5% and very low perceived bitterness, making it exceptionally smooth for its strength.
Technical Notes: This beer is built on a "cloud-like" grist of malted barley, oats, and wheat, which provides the protein-rich structure for its permanent haze and creamy texture. It is heavily dry-hopped with the iconic trio of Citra, Mosaic, and Simcoe, using modern hopping techniques to extract maximum essential oils while leaving behind the harsh vegetable bitterness.
