Deborah Terroir is Jamison Savage's washed Gesha from Finca Deborah in Panama's Volcan region. The farm sits in cloud forest more than 1,900 metres above sea level, where volcanic soil and cool conditions provide the setting for its distinctive coffees.
For Terroir, cherries are pulped using reduced water and the coffee is carefully dried on raised beds. The approach gives the Gesha variety room to express its delicate aromatics and precise structure without the heavier fruit character of more experimental processing. Orange blossom, black tea and nectarine guide the cup, bringing together florals, tea-like clarity and stone-fruit sweetness. This is a refined, expressive coffee for drinkers who enjoy the subtler side of Panama's Gesha offerings.
