Tasting notes: Tropical Fruit, Chocolate
Decaf Funky comes from El Vergel Estate in Fresno, Tolima, where Elias and Shady Bayter work alongside their mother, Marta. The family began cultivating coffee in 2012 on the slopes of the Nevado del Ruiz volcano and has expanded from traditional Caturra and Castillo into a wider range of specialty varieties. This Caturra lot delivers a lively cup with ripe berries, tropical fruit, soft caramel, and a silky, clean finish.
After harvest, whole cherries undergo 48–60 hours of anaerobic fermentation to build fruit intensity and sweetness. The coffee is then dried in two controlled stages, first on covered raised beds and then mechanically for consistency, before being decaffeinated with the natural sugarcane ethyl acetate process. Derived from Colombian sugarcane, this method gently removes caffeine while preserving the coffee’s structure, sweetness, and distinctive origin character.
